Chaat, meet grilled cheese. This quick and easy dish uses a spice blend to save you a lot of time and still deliver big flavor. The dipping sauces are easy, but it's also fantastic on its own if you just want to whip up something quick.
My perfect texture secret: Microwave the slices of bread, cheese side up, briefly (about 30 seconds or just until the cheese melts a bit). If you don't own a microwave you'll want to reduce the cooking temp a bit when you toast the bread.
Chaat is essentially a quick snack you can make at any time with things that are already in your pantry. Usually, family and friends sit over a tablescape of different chaats with a cup of freshly brewed chai to gossip. A popular pun is, \"let's chat over chaat.\"
Then, add the red onions, tomatoes, peanuts, serrano peppers, chaat masala, chili powder, salt, and cilantro into a large mixing bowl. Squeeze the lemon juice over everything. Toss contents of the bowl until well combined.

This famous Indian Street Food is made with green chutney, butter, potatoes, tomatoes, cucumbers, onions, grated cheese, and chaat masala. On occasion, I've also seen the addition of beets and green bell peppers on these sandwiches.
Cheese: Any cheese that melts well will work in this recipe. I used white Mexican cheese, you can use Mexican cheese blend, Cheddar Cheese, Pepper Jack Cheese, or even Amul Cheese. It's best to use grated cheese.
Cilantro Chutney: A must-have. Here's my recipe for Cilantro Chutney. Alternatively, you can use Mint Chutney or a combo of both. This is what makes the sandwich desi, in addition, to chat masala.
If you go to any grocery store, you will see shredded Mexican cheese. It's a combination of cheddar, colby, and jack cheese. If you can't find Mexican cheese, white cheddar will work or you can use pepper jack cheese. Hope that helps.

The sandwiches are spiced up with a spicy green chutney and chaat masala or sandwich masala. Overall it is a flavorful filling and carb-loaded sandwich. If you like potatoes then I am sure you will like these sandwiches.
I usually add 2 to 3 green chilies as we prefer a bit spicy chutney in the sandwiches. You can also add half-half of coriander leaves and mint leaves. Just add a pinch or two of salt, as chaat masala already has salt in it.
They make for a filling and satisfying brunch, lunch or evening snack. It is best to have these masala sandwiches while still hot or warm. On cooling the texture of the toasted bread can become chewy.
There are really thousands of regional variations but at the core of it every chaat must have a base ingredient, sauces, crunch, vegetables and a spice punch. My Matar Paneer Chaat is an endeavour to make chaat delicious without any fried dough bits or processed carbs and choose a healthy protein as a base ingredient which can be nothing better than homemade paneer. Paneer is a rennet free, quick n easy, cheese that you can easily make at home by curdling warm milk with lemon juice, vinegar or yogurt and then strain it to get a firm block of paneer. The vegetables, fruits and roasted peanuts add plenty of juicy crunch and mouthful of munch to it. Tamarind, lemon, brown sugar, mint and chilli peppers provide the much needed sweet n sour boost.

Cheesy Garlic Masala Pav Sliders is a garlic, cheese and pav bhaji lovers delight and a great party appetizer. Its made with pav (dinner rolls) slathered in garlic butter and stuffed with spicy bhaji and cheese. Its then baked till cheese is all melted and served warm and soft topped with some onions and cilantro.
If you have been to Mumbai, you probably have tasted Pav Bhaji, Tawa Pulav and their cousin or sibling \"Masala Pav\". 2 years of my junior college life I have eaten masala pav pretty much everyday with my friends at our favorite restaurant just outside of my college.
My take is more from a perspective to feed a crowd while easy to make. I wanted to bring masala pav to a potluck so the lazy me thought of putting together the dish in bulk and that's when I thought of the slider idea. Cheesy Garlic Masala Pav has all the goodness of the masala pav in addition to cheese and a wash made with butter, garlic that takes this recipe to the next level.
Stir in the bell pepper, tomatoes, add salt, pepper. Mix, cover and cook until the tomatoes are soft. Then add the tomato paste, red chilli powder and pav bhaji masala and cook for another minute or so or until most of the moisture has dried off. We don't want the masala to be too wet. Finish off with squeeze of lemon juice, chaat masala and cilantro. This masala can be made a day or two in advance and stored in airtight container in refrigerator or can even be frozen.
Slice the ladi pav (12 dinner rolls) lengthwise half way across using a serrated knife. Take a baking dish and grease it with some butter or if using a baking tray, line it with parchment paper. Place the bottom half of the dinner rolls on the prepared dish/tray and apply butter followed by an even sprinkle of pav bhaji masala.
Apply butter followed by an even sprinkle of pav bhaji masala for the top half of the dinner rolls and place on top of cheese to close. Make the garlic butter by melting the butter in microwave for 20 seconds or until melted. And to it add the minced garlic, pinch of salt, cilantro and some pav bhaji masala. Apply it on the top of each roll and spread evenly. Cover with aluminum foil and Bake in preheated oven at 350F for 20-25 mins or until the cheese had melted. Remove the foil and bake for another 5-7 mins uncovered.
In a pot over medium-high heat, add oil. Once the oil is hot, add the onions and season with a pinch of salt. Stir well and cook on medium heat for 7 minutes, stirring occasionally. Add garlic and ginger and sauté for 1 minute. Add cumin, coriander, garam masala, chili powder, and turmeric and stir for 30 seconds. Add Campbell's Condensed Tomato Soup and 1 1/2 cans of water. Stir well and bring to a boil over medium-high heat, then simmer over low heat for 5 minutes.
To make the chutney, add cilantro, mint, ginger, chile, fennel seeds, lime juice and chaat masala to a blender. Blend until smooth, adding a few tablespoons of water if needed to smooth it out. Add salt to taste and set aside.
To make the grilled cheese, spread the green chutney on one side of two slices of bread. Top one side with a slice of cheese, a layer of tomato slices and another slice of cheese. Top with the bread with the chutney side in the sandwich. Spread mayonnaise onto the top of the sandwich and place the sandwich on a skillet over medium heat, mayo side down. Cook for 2 to 3 minutes, or until golden brown. Spread mayonnaise on the top of the sandwich and flip. Cook for another 2 to 3 minutes, or until golden brown. Serve with masala tomato soup. 153554b96e
